AHHH! It's 7am, you need to leave for work in 10 minutes, what on EARTH are you going to do for breakfast? No, you aren't going to skip it ... naughty, naughty! Breakfast is the most important meal of the day, and if you're on the go allllll day, you need some fuel!

Option #1:
If you've got some on hand, pull out a bagel/several slices of bread/english muffin/frozen waffle and pop it/them in the toaster. While they toast, you can pack your lunch, pull on your shoes, get your bag together, and be all ready to go when the bagel/toast pops out of the toaster! If you have an extra 30 seconds, you might want to spread a little cream cheese, butter, or jam on the bagel/toast. And voila! In about 2 minutes, you won't be starving to death.

Option #2:
Grab an apple, banana, orange, pineapple, any sort of fruit you might have available, pop some bread in the toaster, and finish getting ready!

If all else fails... Go for Option #3:
Grab a nutrigrain bar or a granola bar :)

Just remember, don't you DARE grab a candy bar and a soda; that will not leave you ready and willing to start your day!

Lazy Day Breakfast

Whooo!!! It's SATURDAY!!!! You actually have NOWHERE to be; for once, no one to pester you; for once, what can you do to pamper yourself? You can get up whenever you feel like it, and head to the kitched to cook up whatever looks absolutely delicious! Then, once your scrumptious meal is complete, set it up on a tray and head back to the bedroom. Slip under the covers, turn on the tv and munch away!

Some great Lazy-Day breakfast ideas include chocolate chip pancakes (use your average pancake recipe, but add chocolate chips to the mix); orange juice; grapefruit juice; milk; coffee; French Toast with powdered sugar/peanut butter/syrup; fresh fruit; Belgian Waffles with whipped cream; toast; and toasted bagels. Don't forget the wet naps to wipe up the crumbs ;)

Lazy day breakfast dishes can also be prepared the night before, and whenever you wake up on Saturday or Sunday, breakfast (or brunch) is ready in minutes. For example, Stuffed French Toast Bake is a make-ahead recipe that bakes up to a beautiful, puffy golden brown in just 25 minutes. There are many varieties of flavoured cream cheese that would work very well in this easy recipe; choose your favourite. Or substitute plain cream cheese mixed with your favourite fruit jam. This super-easy salad is a real surprise; fruit frozen with sweetened buttermilk is really delicious and refreshing.

Stuffed French Toast Bake
1 16-oz. loaf French bread, cut into 24 3/4" thick slices
1 8-oz. container soft cream cheese with pineapple
4 eggs
1 cup milk
1/4 cup sugar
1/8 tsp. salt
1/4 tsp. cinnamon
2 Tbsp. butter, melted

DIRECTIONS:
1. Spray 13x9" glass baking dish with nonstick cooking spray.

2. Spread about 1 tablespoon cream cheese on each of 12 bread slices. Top with remaining bread slices to form 12 sandwiches. Place filled sandwiches in sprayed baking dish to cover bottom in a single layer.

3. In large bowl, beat together eggs, milk, sugar, salt and cinnamon and pour over bread sandwiches. Let stand at room temperature for 5 minutes, then cover well and refrigerate 8 hours or overnight.

4. When ready to eat, heat oven to 400 degrees. Uncover baking dish and drizzle bread sandwiches with melted butter. Bake at 400 degrees for 25-30 minutes or until golden brown. Serves 6

Frosty Fresh Fruit
Use any fresh fruit that is ripe and delicious in this easy recipe. The buttermilk makes it taste rich and creamy, without a lot of fat.

4 cups buttermilk
1 cup sugar
1 tsp. almond extract or vanilla extract
1/8 tsp. salt
3 cups prepared fresh fruit, cut into chunks or slices

Mix buttermilk, sugar, extract and salt in large bowl. Gently stir in fruit. Pour into an ungreased 9" square pan, cover tightly, and freeze until firm, about 3-4 hours. Let stand at room temperature 10-15 minutes before cutting. Serves 12.
